ERN 2024 The Science of Spherification Workshop

“Science isn’t just something we do in the lab; it’s something we live and share.” This sentiment was petrsonified by Dr. Karen de la Vega during the European Researchers’ Night in Tarragona.

The event, held at Corsini Square, brought together over 5,000 enthusiastic participants, including many curious children whose excitement was truly contagious.

Dr. de la Vega, along with her colleagues Manuel Petroselli and Kamil Ludorf, hosted an engaging workshop on the fascinating process of spherification. This technique, often used by professional chefs, involves creating spheres from liquids through a chemical reaction. The workshop demonstrated how chemistry and food are more intertwined than one might think, sparking curiosity and wonder among the young attendees.
